Try these treats for Halloween

Trick or Treats

These aren't your ordinary cookie and candy apple recipes. Both use Gjetost cheese imported from Norway. Its slightly sweet taste, reminiscent of caramel, will have friends and family asking what makes these Halloween treats so special.

JACK O'LANTERN COOKIES

1 cup softened butter or butter substitute

1/2 cup firmly packed light brown sugar

1/2 cup granulated sugar

2 eggs

1 teaspoon vanilla extract

1-1/3 cups unsifted all-purpose flour

1 teaspoon baking soda

1-1/2 cups quick or old-fashioned rolled oats

6 ounces dried fruit bits

1-1/2 cups (6 ounces) Gjetost cheese, cut into 1/4-inch cubes

1 cup chopped walnuts, optional

Frosting

2 cups confectioner's sugar

2-3 tablespoons milk

Green and orange food coloring

With electric mixer, cream butter and sugars until light and fluffy. Blend in eggs and vanilla. Combine flour and baking soda, and stir into batter. Blend in oats, fruit, cheese and, if desired, walnuts. With tablespoon as measure, shape into balls and place on baking sheet at 2-inch intervals. Press down lightly with bottom of drinking glass. Bake at 375 F, 10 minutes or until golden. Transfer to cooling rack.

In bowl, blend confectioner's sugar with enough milk to make a thick frosting. Divide in half. Color one half green, the other orange. Use to decorate cookies with Jack O'Lantern faces. Makes about 54 cookies.

Norse-Style Caramel Apples

1-14 ounce bag caramels (28 pieces)

1/4 cup water

1 cup (4 ounces) shredded Gjetost cheese*

6 wooden sticks

6 medium apples, washed and dried

1 cup chopped salted peanuts

In medium saucepan over low heat, melt caramels with water, stirring frequently. Add Gjetost and continue to heat, stirring until melted and smooth. Insert stick into stem end of each apple. Dip apples into hot mixture, turning to coat evenly on all sides. Scrape off excess. Press bottoms into chopped peanuts to coat. Place on waxed paper-lined baking sheet and refrigerate until ready to serve.

*Norwegian Gjetost is a combination of whey, goat's milk and cream that's golden in color. Typically served with fruits or served at breakfast on crispbread, it's considered one of Norway's favorite cheese treats. Gjetost is available at many local supermarkets and specialty cheese shops, in a distinctive red cube package, labeled Ski Queen.
